Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • ½ cup apple cider
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • Salt and black pepper
  • Fresh thyme (optional)

Instructions

  • Season and Sear: Pat pork chops dry and season both sides with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chops 3–4 minutes per side until golden. Remove and set aside.
  • Make the Glaze: In the same pan, add garlic, cider, mustard, and honey. Stir and simmer 3–4 minutes until slightly reduced.
  • Finish the Dish: Add butter, then return pork chops to the pan. Spoon glaze over the chops and cook another 2–3 minutes, until sauce thickens and pork reaches 145°F (63°C).
