BLACKENED SALMON WITH MANGO SALSA

Fresh, vibrant, and full of flavor — this blackened salmon topped with zesty mango salsa is one of my favorite quick weeknight meals. It’s smoky, slightly spicy, and perfectly balanced with tropical sweetness.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Mango Salsa

  • 1 large ripe mango, diced
  • ½ red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Prepare the Spice Blend:Combine smoked paprika, garlic powder, onion powder, cayenne, thyme, salt, and pepper.
  2. Season the Salmon:Pat salmon fillets dry, brush with olive oil, and coat with spice blend.
  3. Cook the Salmon:Heat skillet over medium-high heat; sear each side 3–4 minutes until crisp and cooked through.
  4. Make the Mango Salsa:Combine mango, bell pepper, onion, jalapeño, lime, cilantro, and salt in a bowl.
  5. Serve and Enjoy:Top salmon with mango salsa and serve immediately.

Serving Suggestions

Wine Pairing: Sauvignon Blanc or Pinot Gris
Side Dishes: Jasmine rice, roasted asparagus, or a green salad
