We feature only thick-cut, skinless, loin portions. Sea Bass has a wonderful rich flavor. It's loaded with heart-healthy omega-3 fatty acids and has snow-white flesh that forms large flakes when cooked. Because of its high oil content, the meat is "melt-in-your-mouth" tender and moist. Our sea bass is filleted and de-boned, then flash-frozen at sea less than 4 hours from catch to ensure a high grade of product quality and freshness. They are then vacuum-sealed for long freezer life and freshness. Sea Bass is an excellent fish for grilling, but you can also bake, broil, poach, sauté, blacken Cajun-style, or smoke Sea Bass. Broiling: Surface of fish should be 3 to 4 inches from source of heat. Preheat broiler. Broil 10 to 12 minutes. Steaming: Use a steamer, pour liquid (white wine, water) spices and herbs over fish. Cover and bring to a boil, steam fish about 12-14 minutes over medium heat.
